Bulgur (also spelled bulghur or burghul) is a staple of Middle Eastern and Mediterranean cuisine made from cracked, parboiled whole wheat kernels that have been dried and ground into various sizes.
Description
Bulgur is a whole grain cereal with a light, nutty flavor and a chewy, firm texture when cooked. Because it is already partially cooked (parboiled) during processing, it is considered an "ancient fast food" and cooks much quicker than other whole grains.
Bulgur is typically sorted into four different grades based on particle size:
- Fine (#1): The smallest grade, similar to the texture of sand or couscous. It is often prepared by soaking in hot water or lemon juice rather than boiling.
- Medium (#2): Slightly larger than fine, this grade is commonly used in cereals or a wider variety of dishes, including some types of kibbeh.
- Coarse (#3 & #4): These larger grains are used in heartier dishes like pilafs, soups, and casseroles, or as a substitute for rice. They require simmering on the stovetop to become tender.
