Brown sugar is a sucrose sugar product characterized by its distinctive brown color, moist texture, and rich caramel-like flavor, all of which result from the presence of molasses. 

Types and Characteristics
Commercial brown sugar is typically produced by adding specific amounts of sugarcane molasses to refined white sugar crystals. 
  • Light Brown Sugar: Contains approximately 3.5% molasses by weight. It has a mild caramel flavor and is the most common variety used for general baking like chocolate chip cookies and cakes.
  • Dark Brown Sugar: Contains approximately 6.5% molasses by weight, nearly double that of light brown sugar. It is darker, moister, and has a stronger, almost bitter toffee or smoky profile, making it ideal for gingerbread, baked beans, and barbecue sauces.
  • Natural/Unrefined Brown Sugars: These varieties retain some of their natural molasses during the initial refining process rather than having it added back. Common types include:
    • Muscovado: A very dark, moist, and sticky unrefined sugar with an intense molasses flavor.
    • Demerara & Turbinado: Often called "raw sugar," these have larger, golden-colored crystals and a milder toffee taste. 

Functional Properties in Cooking
  • Moisture Retention: Molasses is hygroscopic, meaning it attracts and holds water. This property ensures that baked goods like brownies and chewy cookies remain soft and moist over time.
  • Acidity: Brown sugar is slightly acidic due to the molasses. This acid reacts with baking soda to help dough rise and enhances the browning (caramelization) of crusts.
  • Flavor Depth: Unlike the neutral sweetness of white sugar, brown sugar adds complex notes of toffee, caramel, and butterscotch. 

Storage and Handling
Because of its high moisture content, brown sugar can harden into a "brick" if exposed to air and the moisture evaporates. 
  • Prevention: Store in an airtight container.
  • Softening: Placing a slice of bread or an apple wedge in the container can restore moisture as the sugar absorbs it from the food item. For immediate use, it can be microwaved briefly with a damp paper towel
