"00" White Flour (Italian Grading)
In Italy and other parts of Europe, flour is graded by how finely it is milled, from type "2" (coarsest) to type "00" (doppio zero), the finest grade, with a texture similar to baby powder. This grading does not indicate zero calories or carbohydrates, and it still contains a typical amount of protein and gluten.
- Intended Use: It is considered the gold standard for making authentic Italian fresh pasta and Neapolitan-style pizza bases because its fine texture creates a smooth, elastic dough that results in a tender yet crispy crust when cooked at high temperatures.
