Dried Red Lentils (known in Arabic as Adas Ahmar; عدس أحمر) are a nutrient-dense staple in Middle Eastern and Mediterranean pantries. Unlike whole lentils, these are hulled (skin removed) and split, which allows them to cook much faster and dissolve into a creamy, velvety consistency.
Key Characteristics
- Appearance: Small, disc-shaped splits that are bright orange-red when dry and turn golden-yellow when cooked.
- Texture: They do not hold their shape well; instead, they break down easily, making them perfect as a natural thickener for soups and purees.
- Cooking Time: Very fast, typically requiring 10–15 minutes.
- No Soaking Required: Unlike beans or chickpeas, red lentils do not need to be soaked, though rinsing them before use is recommended to remove du Nutritional Value (per 100g Dried)
Red lentils are a high-protein, low-fat alternative to animal products.

Traditional Dishes
- Shorbat Adas (Lentil Soup): The most popular use, particularly during Ramadan. It is typically seasoned with cumin, turmeric, and garlic, then finished with a squeeze of fresh lemon.
- Adas bi Hamod: A Lebanese variant featuring lentils, Swiss chard, and a heavy lemon-garlic base.
- Dal Adas: A spicy Persian-style stew often served over rice or with bread.
- Fattet Adas: A Palestinian dish where lentil soup is poured over toasted pita bread and garnished with fried onions.
