  • Ingredients: Primarily made from 100% Italian durum wheat semolina and water. Some specialty products like the Fettuccine all'uovo also include fresh eggs. Gluten-free options are available, made from a blend of rice, brown rice, corn, and quinoa flours.
  • Production: The traditional processing method involves kneading, extrusion through bronze dies for a porous texture, and slow drying at medium or medium-low temperatures to preserve nutritional quality.
  • Protein Content: The standard durum wheat pasta boasts a high protein content of around 13-14%.
