"Kebbi Spices" (most commonly known as Kibbeh Spice or Kamouneh) is a specific aromatic blend used in Levantine cuisine to season Kibbeh—the iconic dish of finely ground meat, bulgur, and onions. 

Core Ingredients
The hallmark of a high-quality Kibbeh spice is its balance of "warm" and "cool" notes. While recipes vary, the blend traditionally includes:
  • Cumin (Kamoun): The dominant flavor, essential for digestion and the base earthy note.
  • Dried Marjoram & Basil: These provide the distinct "green" herbal aroma characteristic of Lebanese Kibbeh.
  • Cinnamon & Allspice: Add a subtle, sweet warmth.
  • Black Pepper: For a mild, foundational heat.
  • Dried Rose Petals: Often included in premium blends (like South Lebanese Kamouneh) for a delicate floral undertone.
  • Cloves & Nutmeg: Used in small amounts for depth and complexity.

  2. Kamouneh: A specialized, herb-heavy blend (common in Southern Lebanon) used for Kibbeh Nayyeh (raw kibbeh) or mixed with bulgur and tomatoes to make Kamouneh Bandora.
